01 - In a large mixing bowl, combine the cooked chicken, diced avocado, chopped celery, diced red bell pepper, and finely chopped red onion.
02 - In a separate small bowl, whisk together the mayonnaise, fresh lime juice, Dijon mustard, garlic powder, salt, and black pepper until well combined.
03 - Pour the prepared dressing over the chicken and vegetable mixture. Gently toss to ensure all ingredients are evenly coated.
04 - Lay out the tortillas or gluten-free wraps. Spread a layer of baby spinach or mixed salad greens in the center of each.
05 - Spoon the avocado chicken salad mixture evenly onto the prepared wraps, over the greens.
06 - Fold the sides of each wrap inward, then tightly roll from the bottom upwards.
07 - Slice the wraps in half if desired. Serve immediately, or wrap individually in parchment paper for convenient transport.
