01 - Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
02 - In a large skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, nutmeg, salt, and lemon juice. Cook, stirring occasionally, for 6-8 minutes until apples are tender but not mushy.
03 - If the filling is too liquid, stir in cornstarch and cook for 1-2 minutes until thickened. Remove from heat and stir in 1/3 cup of caramel sauce.
04 - Lay tortillas flat. Divide the apple filling evenly among the tortillas, placing it in a line down the center of each.
05 - Fold in the sides of each tortilla, then tightly roll up to enclose the filling.
06 - Place the rolled wraps seam-side down on the prepared baking sheet. Brush the tops lightly with melted butter.
07 - In a small bowl, mix granulated sugar and 1/2 teaspoon of cinnamon. Sprinkle this mixture evenly over the tops of the wraps.
08 - Bake for 12-15 minutes, or until the wraps are golden brown and slightly crisp.
09 - Drizzle with extra caramel sauce before serving. Serve warm.
