01 - Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine the halved baby potatoes, olive oil, ranch seasoning mix, garlic powder, black pepper, and paprika. Toss thoroughly until the potatoes are evenly coated.
03 - Spread the seasoned potatoes cut-side down on the prepared baking sheet in a single, even layer.
04 - Bake for 25 to 30 minutes, or until the potatoes are golden brown and crisp on the edges.
05 - Remove the baking sheet from the oven. Sprinkle the shredded cheddar and grated parmesan uniformly over the roasted potatoes.
06 - Return the baking sheet to the oven and continue baking for an additional 5 to 7 minutes, or until the cheeses are fully melted and bubbly.
07 - Remove from oven. Garnish with chopped fresh parsley if desired. Serve hot.
