# Directions:

- Spiralize zucchinis and carrots. Slice bell pepper, trim snap peas, and cut green onions. Chop cilantro and set all vegetables aside.
- Whisk together peanut butter, soy sauce, rice vinegar, lime juice, maple syrup, sesame oil, garlic, and ginger in a medium bowl. Add 2 tablespoons warm water and whisk until smooth. Gradually add remaining water, 1 tablespoon at a time, until sauce reaches desired consistency. Set aside.
- Heat a large nonstick skillet or wok over medium-high heat. Add a splash of sesame oil if desired for enhanced flavor.
- Add bell pepper, carrot, and snap peas to the hot skillet. Stir-fry for 2 to 3 minutes until vegetables are tender-crisp.
- Add spiralized zucchini noodles and toss gently for 2 to 3 minutes until heated through. Avoid overcooking to prevent noodles from becoming soggy.
- Pour peanut sauce over vegetables and noodles. Toss until evenly coated and cook for 1 to 2 minutes, stirring occasionally, until warmed through.
- Transfer to serving dishes immediately. Top with chopped roasted peanuts, fresh cilantro, and green onions.
