01 - 1 large ripe mango, peeled, pitted, and diced
02 - 1 ripe avocado, peeled, pitted, and diced
03 - 1 small red onion, finely chopped
04 - 1 small red bell pepper, diced
05 - 1 small jalapeño, seeded and minced (optional)
06 - 1/4 cup fresh cilantro, chopped
07 - Juice of 1 lime
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon freshly ground black pepper
→ Chicken Sausage
10 - 4 chicken sausages, grilled or smoked
11 - 1 tablespoon olive oil
# Directions:
01 - In a medium mixing bowl, gently mix diced mango, avocado, red onion, bell pepper, jalapeño if desired, and chopped cilantro.
02 - Add lime juice, salt, and freshly ground black pepper. Toss gently to avoid crushing the avocado. Set aside to allow flavors to meld.
03 - Warm olive oil in a skillet over medium heat. Add chicken sausages and cook, turning occasionally, until fully warmed and golden brown, about 8–10 minutes. Alternatively, grill sausages until well charred.
04 - Cut the cooked sausages diagonally into thick slices.
05 - Arrange sausage slices on a serving platter or individual plates. Spoon mango avocado salsa over the sausages. Serve immediately.
