# Directions:
01 - Heat a small skillet over medium-low. Melt the unsalted butter, then add the sliced onion, granulated sugar, and a pinch of salt. Gently cook, stirring occasionally, until the onions turn deeply golden and caramelized, approximately 12 to 15 minutes.
02 - Transfer the caramelized onions and pan juices to a blender. Add 2 tablespoons of milk and process until perfectly smooth. Pass the mixture through a fine-mesh sieve for a silkier consistency.
03 - Brew 2 ounces of espresso and divide between two cups. Spoon 1 tablespoon of the strained onion purée into each cup, stirring to incorporate.
04 - Heat the remaining milk until steaming, then froth using a milk frother or whisk until rich and creamy.
05 - Pour the frothed milk over the espresso-onion mixture in each cup. If desired, sweeten with honey or maple syrup. Stir gently and serve immediately.
