01 - In a medium mixing bowl, thoroughly whisk together the ricotta cheese, Greek yogurt, honey (or maple syrup), and vanilla extract until a smooth and creamy consistency is achieved.
02 - In a separate bowl, gently combine the sliced strawberries, blueberries, and raspberries with the lemon juice and granulated sugar (if using). Toss lightly to coat.
03 - To construct each parfait, begin by placing a spoonful of the ricotta mixture at the base of a glass or jar. Follow with a layer of the prepared berry mixture. Continue alternating layers of the ricotta and berry mixtures until all ingredients are depleted, concluding with a final layer of berries on top.
04 - If desired, top each parfait with granola or chopped nuts and fresh mint leaves for added texture and visual appeal.
05 - Serve the parfaits immediately. Alternatively, they can be chilled in the refrigerator for up to 2 hours prior to serving.
