# Directions:

01 - In a medium bowl or large jar, combine oats, milk, Greek yogurt, chia seeds, honey or maple syrup, vanilla extract, and salt. Stir thoroughly until evenly incorporated.
02 - In a separate small bowl, mash half of the diced strawberries with lemon juice and lemon zest until juicy with visible fruit pieces remaining.
03 - Fold the mashed strawberry mixture, remaining diced strawberries, and poppy seeds into the oat base. Stir until fully combined.
04 - Cover the bowl or seal the jar and refrigerate for at least 6 hours or overnight to allow oats to soften and flavors to develop.
05 - In the morning, stir the oats thoroughly. Add additional milk by the splash if a thinner consistency is preferred.
06 - Divide between two bowls or jars. Top with sliced strawberries, additional lemon zest, and poppy seeds. Serve chilled.
