02 - 2 tablespoons olive oil
03 - 2 tablespoons Cajun seasoning
04 - 1 teaspoon smoked paprika
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon dried thyme
08 - 1/2 teaspoon dried oregano
09 - 1/2 teaspoon ground black pepper
10 - 1/2 teaspoon salt
11 - 2 tablespoons unsalted butter
12 - 2 tablespoons chopped fresh parsley, for garnish

→ Fries

13 - 2 lbs russet potatoes, peeled and cut into fries
14 - 2 tablespoons vegetable oil
15 - 1 teaspoon salt
16 - 1/2 teaspoon paprika
17 - 1/4 teaspoon ground black pepper

# Directions:

01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - Toss russet potato fries with vegetable oil, salt, paprika, and black pepper. Spread evenly on the prepared baking sheet and bake for 25–30 minutes, turning fries halfway through, until golden and crisp.
03 - While the fries bake, pat sirloin steak cubes dry with paper towels to remove excess moisture.
04 - Combine Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, ground black pepper, and salt in a large bowl. Add steak cubes and toss thoroughly to coat evenly.
05 - Heat olive oil in a large cast-iron skillet over medium-high heat. Arrange steak bites in a single layer, working in batches if necessary. Sear each side for 1–2 minutes until well browned and cooked to preferred doneness.
06 - Add unsalted butter to the skillet and toss steak bites until evenly coated and glossy.
07 - Remove skillet from heat. Sprinkle steak bites with chopped fresh parsley.
08 - Arrange hot steak bites with crispy fries. Serve immediately.
