# Directions:
01 - Preheat oven to 300°F. Line a baking sheet with parchment paper.
02 - In a large, clean bowl, beat egg whites and cream of tartar with an electric mixer until soft peaks form. Gradually add granulated sugar, continuing to beat until the mixture forms stiff, glossy peaks.
03 - Whisk egg yolks, cornstarch, and vanilla extract in a separate bowl until the mixture is smooth and well combined.
04 - Carefully fold the egg yolk mixture into the whipped egg whites, maintaining the aerated texture.
05 - Evenly divide the batter into separate bowls according to the number of desired colors. Add a few drops of gel food coloring to each bowl and gently fold until the color is uniform.
06 - Spoon colored batters onto the prepared baking sheet in adjacent dollops to achieve a rainbow pattern. Optionally, swirl gently with a spatula for a marbled appearance.
07 - Bake for 25 minutes, or until set and lightly golden.
