One-Pan Egg Breakfast Sandwich (Print View)

A speedy breakfast featuring fluffy eggs cooked atop toasted bread with melted cheese and fresh chives.

# Components:

→ Eggs

01 - 3 large eggs
02 - 2 tablespoons whole milk
03 - Salt and black pepper, to taste

→ Bread

04 - 2 slices sturdy sandwich bread (sourdough or whole wheat)
05 - 1 tablespoon unsalted butter

→ Cheese & Toppings

06 - 2 slices cheddar cheese
07 - 2 tablespoons chopped chives or green onions (optional)

# Directions:

01 - Whisk together eggs, milk, salt, and pepper until smooth and fully blended.
02 - Heat a large nonstick skillet over medium heat. Melt butter and swirl to coat the pan evenly. Place bread slices side by side in the skillet and toast until golden underneath, about 1–2 minutes. Flip bread slices.
03 - Pour egg mixture directly over and around the bread slices in the skillet. Let eggs begin to set for 10–15 seconds.
04 - Using a spatula, gently push eggs toward the edges of the bread, allowing uncooked egg to flow underneath.
05 - When eggs are mostly set but still slightly moist, place one slice of cheese on each bread slice.
06 - Fold any excess cooked egg onto the bread slices with the spatula, then stack one slice on top of the other to form a sandwich.
07 - Cook an additional 1–2 minutes, pressing gently, until cheese melts and sandwich is golden and heated through.
08 - Remove sandwich from skillet, cut in half if desired, and sprinkle with chopped chives or green onions. Serve immediately.

# Expert Advice:

01 -
  • Everything cooks in one pan so cleanup is almost nonexistent, even on your busiest mornings.
  • The eggs cook directly onto the bread, creating layers of flavor and texture you don't get from assembling parts separately.
  • It feels indulgent and homemade but comes together faster than most drive-through runs.
02 -
  • Keep the heat at medium or the bread will burn before the eggs have a chance to cook through properly.
  • Don't skip the milk in the eggs, it's what keeps them soft and prevents that rubbery texture you get from cooking eggs too fast or too dry.
  • Use a nonstick pan or the eggs will stick and tear when you try to fold them, ruining the whole sandwich.
03 -
  • Let the pan preheat properly before adding the butter so the bread toasts evenly and doesn't stick or cook unevenly in spots.
  • If you want extra richness, use a mix of butter and a tiny drizzle of olive oil, it adds flavor and helps prevent the butter from burning.
  • Press the finished sandwich gently with the spatula for the last minute of cooking to help the cheese glue everything together and create a compact, holdable sandwich.
