  • Garlic Butter: 100 g (7 tbsp) unsalted butter, softened, 3 cloves garlic, finely minced, 2 tbsp fresh parsley, chopped, 1 tsp fresh thyme leaves, 1 tsp lemon juice, ½ tsp salt
  • Fries: 800 g (1¾ lbs) russet potatoes, peeled and cut into fries, 3 tbsp vegetable oil, ½ tsp salt, ¼ tsp black pepper

Instructions

Prepare oven and potatoes:
Preheat oven to 220°C (425°F). Place a wire rack over a baking sheet. Toss potatoes with vegetable oil, salt, and pepper. Spread on rack in a single layer.
Bake fries:
Bake for 30–35 minutes, turning halfway, until golden and crisp.
Mix garlic butter:
While fries cook, mix butter, garlic, parsley, thyme, lemon juice, and salt in a bowl. Chill for 10 minutes.

Recipe FAQ

How do I achieve a golden crust on the steak?

Ensure steaks are at room temperature and patted dry. Sear in a hot cast iron skillet with a little oil for best results.

What type of potatoes work best for fries?

Russet potatoes yield the crispiest fries due to their high starch content and firmness.

Can I use different cuts of steak?

Yes, strip steak or filet mignon are great alternatives if you prefer variations to ribeye or sirloin.

How do I make the garlic butter extra flavorful?

Use fresh herbs and finely minced garlic. Chilling the mixture briefly helps the flavors meld well before serving.

What wine goes well with this dish?

Full-bodied reds like Cabernet Sauvignon or Malbec pair excellently with these rich flavors.

How can I keep fries crispy?

Soak cut potatoes in cold water for 30 minutes, dry thoroughly, and bake on a wire rack for even crisping.
